Stuffed Ham, Pickle & Cheese Grilled Pitas

Heat up the grill or panini press for these grilled pita pockets filled with gooey, cheesy deliciousness. Indoors or outdoors these will be a hit.

Ingredients

  • 2 (8-inch) pitas, halved
  • 4 teaspoons mayonnaise
  • 4 teaspoons Dijon mustard 
  • 8 slices (12 ounces) Black Forest deli ham
  • 8 slices “sandwich stuffers” bread and butter pickles

  • Avocado or grapeseed oil 

Directions

  1. BRUSH the insides of each pita half with mayonnaise and mustard.

  2. STUFF each pita with 2 slices ham, 2 pickle slices, and 5 Cracker Cut slices of cheese.

  3. TO GRILL: Preheat a grill to medium. Brush the outside of each pita with oil. Place the pitas on the grill and cook, flipping occasionally, until the cheese is hot and gooey, 3 to 5 minutes total.

  4. TO MAKE INDOORS: Preheat a panini press over medium heat. Brush the outside of each pita with oil. Place the pitas in the panini press and cook until the cheese is hot and gooey, about 2 minutes.

Recipe Tips

Of course any Cabot cheese would be delicious in the grilled pitas. Try classic
Seriously Sharp, flavorful Garlic Herb, or tangy Horseradish Cheddar.

Bread and butter pickles give this cheesy grilled pita a touch of sweetness but kosher dill pickles work well too. Be sure to look for “sandwich stuffers,” which are pickles cut long and thin.
